Ingredients

Main Ingredients:

  • 4 cups seedless watermelon, diced (about 1/2 medium-sized watermelon)

  • 1 cup watermelon radishes, thinly sliced (about 3-4 radishes)

  • ¼ cup fresh mint leaves, chopped

  • 2 tablespoons fresh lemon juice (from 1 lemon)

  • 2 teaspoons honey

  • ¼ teaspoon sea salt

  • Freshly ground black pepper, to taste

Optional Garnishes:

  • 2 tablespoons pine nuts, toasted

  • 50 g crumbled feta cheese

  • 1 tablespoon extra-virgin olive oil (for a richer dressing)


Instructions

  • Prepare the Salad Ingredients:

    • Start by dicing your watermelon into small cubes. Be sure to remove any seeds if you’re not using a seedless variety.

    • Thinly slice your watermelon radishes. You can use a mandolin slicer for uniform slices or carefully use a knife.

    • Chop the fresh mint leaves into small pieces. Fresh mint brings a cooling element to the salad and enhances its flavor profile.

  • Whisk the Vinaigrette:

    • In a small bowl, combine lemon juice, honey, sea salt, and a few cracks of freshly ground black pepper.

    • Whisk the mixture until the honey dissolves and the dressing is smooth and emulsified. The honey gives the vinaigrette a touch of sweetness that complements the watermelon’s natural flavors.

  • Assemble the Salad:

    • In a large salad bowl, gently toss together the diced watermelon, sliced watermelon radishes, and chopped mint.

    • Pour the vinaigrette over the salad and toss gently to ensure everything is well-coated.

  • Add Optional Ingredients:

    • For extra richness, drizzle extra-virgin olive oil over the salad and toss it again.
