Ingredients
For White Chocolate Mousse:
- 200g white chocolate (finely chopped)
- 1/2 cup whole milk
- 1 tsp gelatin (or 1 sheet, softened in cold water)
- 1 cup heavy cream (cold)
For Yuzu Curd:
- 1/3 cup yuzu juice (fresh or bottled)
- 2 large egg yolks
- 1/4 cup sugar
- 2 tbsp unsalted butter
- 1/2 tsp gelatin (optional, for firmer texture)
For Assembly:
- Crushed shortbread or vanilla sponge (optional base layer)
- Fresh berries (raspberries, blueberries, strawberries)
- Edible flowers, mint leaves, or gold leaf (optional garnish)
Instructions
1. Make the Yuzu Curd
- In a saucepan, whisk egg yolks, sugar, and yuzu juice until smooth.
- Cook over low heat, stirring constantly, until thickened (coats the back of a spoon).
- Remove from heat, stir in butter until melted.
- Optional: dissolve gelatin in warm water and stir into curd for extra stability.
- Cool completely before layering.
2. Prepare White Chocolate Mousse
- Heat milk until just simmering.
- Add softened gelatin and stir until dissolved.
- Pour over chopped white chocolate, let sit 1 min, then stir until smooth.
- Cool to room temp.
- Whip heavy cream to soft peaks and gently fold into cooled chocolate mixture.
3. Assemble Parfaits
- Spoon crushed shortbread or sponge into bottom of glasses (optional).
- Layer white chocolate mousse, then yuzu curd.
- Repeat layers if desired.
- Top with fresh berries, mint, or edible flowers.
4. Chill & Serve
- Refrigerate for 2–4 hours to set.
- Serve chilled with a citrus twist or berry coulis on the side.
Notes
For extra brightness, top the parfaits with candied citrus peel or a sprinkle of yuzu zest. They can also be prepared a day in advance, making them a perfect elegant dessert for entertaining.
