  • Sugar – 2 tablespoons
  • Vanilla Extract – 1 teaspoon
  • Sea Salt – a pinch
  • Yuzu Zest – 1 teaspoon (for garnish)
  • Toasted Pistachios or Sesame Seeds – optional topping

Instructions

  • Melt the Chocolate: In a heatproof bowl, melt the white chocolate over a double boiler or in short bursts in the microwave. Stir until smooth.
  • Prepare the Gelatin: Heat ¼ cup of heavy cream until warm (not boiling). Stir in softened gelatin until fully dissolved. Mix into the melted chocolate.
  • Whip the Cream: In a separate bowl, whip the remaining heavy cream until soft peaks form. Fold gently into the chocolate mixture.
  • Beat the Egg Whites: In another bowl, beat egg whites with sugar and salt until soft peaks form. Carefully fold into the mousse mixture.
  • Add Yuzu Flavor: Stir in yuzu juice and vanilla extract. Adjust sweetness if needed.
  • Chill & Serve: Divide into serving glasses and refrigerate for at least 3 hours. Garnish with yuzu zest and toasted pistachios or sesame seeds.
