Description

  • 1 whole chicken (about 34 lbs), cut into pieces
  • 2 tablespoons za’atar seasoning
  • 3 tablespoons olive oil
  • 1 lemon, sliced
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 red onion, sliced
  • Fresh parsley for garnish

Instructions

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C).
  2. Season the Chicken:
    • In a large bowl, mix the za’atar seasoning, olive oil, minced garlic, salt, and pepper.
    • Add the chicken pieces and toss to coat evenly.
  3. Prepare the Chickpeas:
    • In a roasting pan, spread the chickpeas and sliced red onion.
    • Drizzle with a little olive oil and season with salt and pepper.
  4. Arrange the Chicken:
    • Place the seasoned chicken pieces on top of the chickpeas and onions.
    • Tuck lemon slices around the chicken.
  5. Roast:
    • Roast in the oven for 45-55 minutes, or until the chicken is cooked through and golden brown.
    • Ensure the internal temperature of the chicken reaches 165°F (74°C).
  6. Garnish and Serve:
    • Garnish with fresh parsley before serving.
