Instructions

1. Make the Crêpe Batter

  1. Blend flour, eggs, milk, sugar, salt, melted butter, and vanilla until smooth.
  2. Refrigerate for at least 30 minutes.

2. Cook the Crêpes

  1. Heat a lightly buttered nonstick skillet over medium heat.
  2. Pour about ¼ cup batter into the pan and swirl thinly.
  3. Cook 1–2 minutes per side.
  4. Transfer to a plate and cool completely.
  5. Repeat until you have 18–22 crêpes.

3. Prepare the Filling

  1. Beat cream cheese until smooth.
  2. Add powdered sugar and vanilla.
  3. In a separate bowl, whip heavy cream to medium-stiff peaks.
  4. Fold whipped cream into the cream cheese mixture.
  5. Gently fold in chopped strawberries.

4. Assemble the Cake

  1. Place one crêpe on a serving plate.

  3. Add another crêpe and repeat.
