For the Chicken

  • 1 kg halal chicken thighs, drumsticks, or a combination
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • 1 tsp salt
  • ½ tsp cayenne pepper, optional
  • ½ tsp ground cumin

Alabama White Sauce

  • 1 cup mayonnaise
  • ¼ cup apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper
  • Salt, to taste

Instructions

1. Marinate the Chicken

  1. Pat the chicken dry and place it in a large bowl.
  2. Add olive oil, lemon juice, vinegar, paprika, garlic powder, onion powder, thyme, black pepper, salt, cayenne, and cumin.
  3. Mix thoroughly, making sure every piece is coated.
  4. Cover and refrigerate for at least 1 hour, preferably overnight.

2. Prepare the White Sauce

  1. Whisk together mayonnaise, apple cider vinegar, lemon juice, Dijon mustard, and honey.
  2. Add garlic powder, onion powder, black pepper, cayenne, and salt.
  3. Mix until smooth and creamy.
  4. Refrigerate for at least 30 minutes to allow the flavors to develop.

3. Grill the Chicken

  1. Preheat your grill to medium-high heat, around 200–220°C (400–425°F).
  2. Remove the chicken from the marinade and allow excess marinade to drip off.
  3. Place the chicken on the grill and cook, turning occasionally, until beautifully charred and cooked through.
  4. Chicken should reach an internal temperature of 74°C (165°F) at the thickest part.
  5. During the final few minutes, brush the chicken lightly with some of the Alabama white sauce if desired. Do not use sauce that has touched raw chicken.

4. Serve

Rest the grilled chicken for 5 minutes, then generously drizzle or brush with the Alabama white sauce.

Serve with grilled corn, coleslaw, potato wedges, fries, or a fresh green salad.

Notes

For the best flavor, marinate the chicken overnight and prepare the white sauce several hours ahead. The combination of smoky grilled chicken with the creamy, tangy, slightly spicy sauce makes this dish especially delicious.
