  • 2 large ripe tomatoes, finely chopped
  • 12 green bell peppers or Turkish peppers, sliced
  • 2 tbsp olive oil or butter
  • 1 small onion, finely chopped (optional)

  • ¼ tsp chili flakes (adjust to taste)
  • Salt and black pepper, to taste
  • 2 tbsp feta cheese (optional)
  • Fresh parsley, for garnish
  • Crusty bread, for serving

Instructions

  • Cook the peppers:
    Heat the olive oil in a skillet over medium heat. Add the peppers and cook for 3–4 minutes until softened.
  • Add onion:
    If using, add the chopped onion and cook for another 2–3 minutes.
  • Add tomatoes:
    Stir in the tomatoes, paprika, chili flakes, salt, and pepper. Cook for 6–8 minutes, stirring occasionally, until the tomatoes break down into a thick, saucy mixture.
  • Add the eggs:
    Make small wells in the tomato mixture and crack in the eggs. Gently stir the eggs into the sauce if you prefer traditional, softly scrambled menemen. Alternatively, leave them mostly whole for a more egg-forward version.
  • Cook gently:
    Cook for 2–4 minutes, until the eggs are just set but still slightly creamy. Avoid overcooking.
  • Finish and serve:
    Sprinkle with feta and fresh parsley. Serve hot, straight from the skillet, with plenty of crusty bread for dipping.

Notes
