  • 250 g pasta (penne, rigatoni, or fusilli)
  • 1 pack Boursin Cheese (about 150 g)
  • 2 cups cherry tomatoes
  • 3 tbsp olive oil
  • 34 garlic cloves, minced
  • 1 tsp chili flakes (optional)
  • Salt and black pepper, to taste
  • 1/2 cup reserved pasta water
  • Fresh basil or parsley, for garnish
  • Parmesan cheese (optional)

Instructions

  1. Preheat oven to 200°C (400°F).
  2. In a baking dish, add cherry tomatoes, olive oil, garlic, chili flakes, salt, and pepper. Toss well.
  3. Place the block of Boursin cheese in the center of the tomatoes.
  4. Bake for 25–30 minutes until tomatoes burst and cheese is soft and golden.
  5. Meanwhile, cook pasta in salted water until al dente. Reserve 1/2 cup pasta water.
  6. Remove baking dish from oven and mash the melted cheese into the tomatoes to form a creamy sauce.
  7. Add cooked pasta and a splash of pasta water. Mix until fully coated and glossy.
  8. Garnish with fresh herbs and Parmesan if desired.
