Description

For the chicken

  • 2 large halal chicken breasts, about 500600 g
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika

For the pasta

  • 400 g spaghetti or linguine
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 250 g mushrooms, sliced
  • 3 tbsp all-purpose flour
  • 2 cups (480 ml) chicken stock, halal-certified
  • 1 cup (240 ml) heavy/whipping cream
  • ½ cup (120 ml) milk
  • 1 cup grated Parmesan cheese, made with halal-friendly/microbial rennet
  • 1 cup shredded mozzarella
  • ½ tsp Italian seasoning
  • Salt and black pepper, to taste
  • 2 tbsp chopped fresh parsley

Instructions

  • Cook the chicken:
    Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt, pepper, garlic powder, and paprika. Cook for about 5–7 minutes per side, until cooked through. Let it rest for 5 minutes, then slice or shred.
  • Cook the pasta:
    Bring a large pot of salted water to a boil. Cook the spaghetti 1–2 minutes less than the package directions so it remains slightly firm. Drain.
  • Make the mushroom sauce:
    Melt the butter in a large skillet. Add the onion and mushrooms and cook for 5–7 minutes until softened. Add garlic and cook for another 30 seconds.
  • Thicken the sauce:
    Sprinkle in the flour and stir for 1 minute. Gradually whisk in the chicken stock, followed by the cream and milk. Simmer for 3–5 minutes, stirring frequently, until the sauce thickens.
  • Add the cheese:
    Stir in ½ cup Parmesan, Italian seasoning, salt, and black pepper. Remove from the heat.
  • Combine:
    Add the cooked pasta and chicken to the sauce. Toss until everything is well coated.
  • Assemble:
    Transfer to a greased 9×13-inch (23×33 cm) baking dish. Sprinkle the mozzarella and remaining ½ cup Parmesan evenly over the top.
  • Bake:
    Bake uncovered at 190°C / 375°F for 25–30 minutes, until bubbling and golden on top.
  • Rest and serve:
    Let it rest for 5–10 minutes. Garnish with fresh parsley and serve warm.

Notes

For an extra creamy and flavorful Tetrazzini, you can add sweet corn, green peas, spinach, or extra mushrooms. You can also sprinkle a little paprika, parsley, or extra mozzarella on top before baking for a beautiful golden finish. Always make sure your chicken, stock, and cheese are halal-friendly.
