For the chicken
- 2 large halal chicken breasts, about 500–600 g
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika
For the pasta
- 400 g spaghetti or linguine
- 2 tbsp butter
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 250 g mushrooms, sliced
- 3 tbsp all-purpose flour
- 2 cups (480 ml) chicken stock, halal-certified
- 1 cup (240 ml) heavy/whipping cream
- ½ cup (120 ml) milk
- 1 cup grated Parmesan cheese, made with halal-friendly/microbial rennet
- 1 cup shredded mozzarella
- ½ tsp Italian seasoning
- Salt and black pepper, to taste
- 2 tbsp chopped fresh parsley
Instructions
- Cook the chicken:
Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt, pepper, garlic powder, and paprika. Cook for about 5–7 minutes per side, until cooked through. Let it rest for 5 minutes, then slice or shred. - Cook the pasta:
Bring a large pot of salted water to a boil. Cook the spaghetti 1–2 minutes less than the package directions so it remains slightly firm. Drain. - Make the mushroom sauce:
Melt the butter in a large skillet. Add the onion and mushrooms and cook for 5–7 minutes until softened. Add garlic and cook for another 30 seconds. - Thicken the sauce:
Sprinkle in the flour and stir for 1 minute. Gradually whisk in the chicken stock, followed by the cream and milk. Simmer for 3–5 minutes, stirring frequently, until the sauce thickens. - Add the cheese:
Stir in ½ cup Parmesan, Italian seasoning, salt, and black pepper. Remove from the heat. - Combine:
Add the cooked pasta and chicken to the sauce. Toss until everything is well coated. - Assemble:
Transfer to a greased 9×13-inch (23×33 cm) baking dish. Sprinkle the mozzarella and remaining ½ cup Parmesan evenly over the top. - Bake:
Bake uncovered at 190°C / 375°F for 25–30 minutes, until bubbling and golden on top. - Rest and serve:
Let it rest for 5–10 minutes. Garnish with fresh parsley and serve warm.
