Description

At its core, this dish is a creative, individual-sized interpretation of classic Greek savory pies. Instead of baking the mixture in a massive casserole dish or flat sheet pan, the dough is rolled into long, thin logs and coiled into beautiful individual spiral shapes.

For the Filling

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 10 oz (280 g) fresh spinach, chopped (or 1 lb frozen spinach, thawed and drained)
  • 1 cup crumbled feta cheese
  • ½ cup ricotta cheese (optional, for a creamier filling)
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • ½ tsp dried oregano
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • Salt, to taste

For the Phyllo Dough

  • 12 sheets phyllo dough, thawed
  • ½ cup melted butter or olive oil
  • 1 egg, beaten (for brushing)
  • 1 tbsp sesame seeds or nigella seeds (optional)

Instructions

Step 1: Prepare the Spinach Filling

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onion for 3–4 minutes until softened.
  3. Add garlic and cook for another 30 seconds.
  4. Add spinach and cook until wilted and excess moisture evaporates.
  5. Remove from heat and allow to cool slightly.
  6. Mix spinach with feta, ricotta, dill, parsley, oregano, black pepper, and red pepper flakes.
  7. Taste and adjust seasoning.

Step 2: Prepare the Phyllo Swirls

  1. Preheat oven to 375°F (190°C).
  2. Place one sheet of phyllo dough on a clean surface and brush lightly with melted butter or olive oil.
  3. Layer another sheet on top and brush again.
  4. Spread a thin layer of spinach-feta filling along one edge.
  5. Roll the phyllo into a long log shape.
  6. Coil the log into a spiral swirl and place it on a lined baking tray.
  7. Repeat with remaining phyllo sheets and filling.

Step 3: Bake

  1. Brush the tops with beaten egg.
  2. Sprinkle with sesame or nigella seeds if desired.
  3. Bake for 25–30 minutes, until golden brown and crisp.
  4. Let cool for a few minutes before serving.
