Ingredients
For the BBQ Jackfruit:
2 cans young green jackfruit in brine (not syrup), drained and rinsed
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon chili powder
1/2 teaspoon cumin
1 1/2 cups BBQ sauce (store-bought or homemade)
Salt and pepper, to taste
For the Pineapple Slaw:
2 cups shredded cabbage (green or mix)
1 cup shredded carrots
1/2 cup fresh pineapple, finely diced
2 tablespoons vegan or regular mayo
1 tablespoon apple cider vinegar
1 teaspoon maple syrup or honey
Salt and pepper, to taste
For Serving:
8 slider buns (toasted if desired)
Optional: pickles, extra BBQ sauce, or fresh cilantro
Instructions
1. Prepare the Jackfruit
Drain and rinse jackfruit. Remove any hard cores and seeds if preferred.
Heat olive oil in a large skillet over medium heat.
Add onion and cook for 3–4 minutes until softened.
Stir in garlic, smoked paprika, chili powder, and cumin; cook 1 minute more.
Add the jackfruit and BBQ sauce, stirring to coat.
Cover and simmer for 20 minutes, stirring occasionally, until the jackfruit softens.
Use two forks to shred the jackfruit into “pulled” pieces. Season with salt and pepper.
2. Make the Pineapple Slaw
In a large bowl, combine cabbage, carrots, and pineapple.
In a small bowl, whisk mayo, apple cider vinegar, and maple syrup.
Pour dressing over slaw and toss until evenly coated. Season to taste.
3. Assemble the Sliders
Layer BBQ jackfruit on the bottom halves of slider buns.
Add a generous scoop of pineapple slaw.
Top with extra BBQ sauce or pickles if desired.
Close with bun tops and serve warm.
