Ingredients
For the BBQ Jackfruit:

2 cans young green jackfruit in brine (not syrup), drained and rinsed

1 teaspoon maple syrup or honey

For Serving:

Instructions
1. Prepare the Jackfruit

Drain and rinse jackfruit. Remove any hard cores and seeds if preferred.

Heat olive oil in a large skillet over medium heat.

Add onion and cook for 3–4 minutes until softened.

Stir in garlic, smoked paprika, chili powder, and cumin; cook 1 minute more.

Add the jackfruit and BBQ sauce, stirring to coat.

Cover and simmer for 20 minutes, stirring occasionally, until the jackfruit softens.

Use two forks to shred the jackfruit into “pulled” pieces. Season with salt and pepper.
2. Make the Pineapple Slaw

In a large bowl, combine cabbage, carrots, and pineapple.

In a small bowl, whisk mayo, apple cider vinegar, and maple syrup.
