Description
The beef kofta kebabs with garlic toum recipe combines a ground meat dish with a traditional garlic sauce. The word kofta refers to a broad family of minced meat preparations. Ingredients
For the Beef Kofta
- 500 g halal ground beef
- 1 small onion, finely grated
- 3 cloves garlic, minced
- ¼ cup fresh parsley, finely chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- ½ tsp ground cinnamon
- ½ tsp black pepper
- 1 tsp salt
- ¼ tsp cayenne pepper, optional
- 2 tbsp breadcrumbs
- 1 tbsp olive oil
For the Garlic Toum
- ½ cup peeled garlic cloves
- ½ cup neutral oil, such as canola or sunflower oil
- 2 tbsp fresh lemon juice
- ½ tsp salt
- 2–3 tbsp cold water
Instructions
Combine the ground beef, grated onion, garlic, parsley, cumin, coriander, paprika, cinnamon, black pepper, salt, cayenne, and breadcrumbs in a large bowl. Mix gently until everything is well combined.
Divide the mixture into 8 portions. Shape each portion around a wooden or metal skewer into a long, slightly flattened kebab. If using wooden skewers, soak them in water for at least 30 minutes beforehand.
Place the shaped kofta in the refrigerator for 20–30 minutes. This helps them hold their shape while cooking.
Add the garlic and salt to a food processor and blend until finely minced. With the processor running, slowly drizzle in the oil in a very thin stream, alternating occasionally with small amounts of lemon juice.
Continue blending until the mixture becomes thick, white, and creamy. Add a little cold water if needed to adjust the consistency.
Preheat a grill or grill pan to medium-high heat. Lightly brush the kofta with olive oil and grill for approximately 4–5 minutes per side, turning occasionally, until browned and cooked through.
For food safety, ground beef should reach an internal temperature of 160°F (71°C).
Serve the hot beef kofta kebabs with generous spoonfuls of garlic toum. Garnish with fresh parsley and lemon wedges.
Notes
For the juiciest kofta, avoid overmixing the beef and don’t press the kebabs too firmly while grilling. The toum can be prepared ahead and refrigerated, making this an easy meal for entertaining.
