Description

At its core, a Steak & Avocado Chimichurri Salad is a gourmet, nutrient-dense meal that pairs seasoned, pan-seared or grilled beef with a crisp bed of fresh vegetables, all tied together by a legendary South American herb sauce. The beauty of this dish lies in its contrast of textures and temperatures. You get the warmth and savory depth of the freshly cooked meat contrasting beautifully with the cool, crisp crunch of the greens and cucumbers.

Ingredients

Scale

For the Salad

  • 1 lb (450 g) sirloin, flank, or ribeye steak
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 6 cups mixed salad greens
  • 1 large avocado, sliced
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, sliced
  • ¼ red onion, thinly sliced
  • ¼ cup crumbled feta cheese (optional)
  • ¼ cup toasted pumpkin seeds or walnuts (optional)

For the Chimichurri Dressing

  • ½ cup fresh parsley, finely chopped
  • ¼ cup fresh cilantro, finely chopped
  • 3 garlic cloves, minced
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste

Instructions

  • Prepare the chimichurri:
Combine parsley, cilantro, garlic, olive oil, red wine vinegar, lemon juice, oregano, red pepper flakes, salt, and pepper in a bowl. Mix well and let it sit for 10–15 minutes to develop flavor.
  • Season the steak:
Pat the steak dry and coat with olive oil, garlic powder, smoked paprika, salt, and black pepper.
  • Cook the steak:
Heat a grill pan or skillet over medium-high heat. Cook the steak for 3–5 minutes per side (depending on thickness and desired doneness). Rest for 5–10 minutes, then slice thinly.
  • Assemble the salad:
Add salad greens, avocado, tomatoes, cucumber, and red onion to a large bowl or platter.
  • Finish and serve:
Top with sliced steak, drizzle generously with chimichurri dressing, and add feta cheese or nuts if desired.
