5 cups fresh baby spinach
1½ cups fresh strawberries, sliced
¼ cup red onion, thinly sliced

2 tbsp sunflower seeds (optional)
For the poppyseed dressing
3 tbsp olive oil
2 tbsp mayonnaise or Greek yogurt
1½ tbsp honey (or sugar)
1 tbsp apple cider vinegar
1 tsp poppy seeds
½ tsp Dijon mustard (optional)
Pinch of salt and black pepper
Instructions
Prepare the salad base
Wash and dry the spinach. Place it in a large bowl.Add toppings

In a small bowl or jar, whisk together olive oil, mayonnaise, honey, vinegar, Dijon mustard, poppy seeds, salt, and pepper until smooth.Combine
