Description
At its core, this dish is a brilliant spin on standard oatmeal. Instead of cooking the grains in boiling liquid on the stove or in the microwave, you let them soak overnight in a rich liquid mixture. Over the course of several hours, the grains absorb the liquid, becoming incredibly plump, tender, and easy to digest.
Ingredients

- 1 cup rolled oats
- 1 cup milk (dairy or non-dairy)
- 1/2 cup Greek yogurt
- 2 oz cream cheese, softened
- 1–2 tbsp maple syrup or honey
- 1 tsp vanilla extract
- 1/2 cup fresh or frozen blueberries
- 1 tbsp chia seeds
- 2 tbsp crushed graham crackers (optional)
Instructions
1. Make the cheesecake mixture
In a bowl, whisk together:
- Greek yogurt
- Cream cheese
- Milk
- Maple syrup
- Vanilla extract
until smooth and creamy.
2. Add oats
Stir in:
- Rolled oats
- Chia seeds
- Half of the blueberries
3. Chill overnight
Divide into jars or containers, cover, and refrigerate for at least 4 hours or overnight.
4. Serve
Top with remaining blueberries and crushed graham crackers before serving.
