For the blueberry base
- 1 cup fresh or frozen blueberries
- 2 tbsp honey or maple syrup
- 1 tbsp fresh lime juice
- ¼ cup water
For the mocktail
- ½ cup coconut water
- ½ cup sparkling water or lemon-lime sparkling water
- ¼ cup coconut milk
- Ice cubes
- Fresh blueberries and lime slices, for garnish
For the coconut cloud
- ¼ cup coconut cream
- 1–2 tsp maple syrup or honey
- ½ tsp vanilla extract
- 1–2 tbsp chilled coconut milk
Instructions
- Make the blueberry syrup: Add blueberries, honey/maple syrup, lime juice, and water to a small saucepan. Simmer over medium heat for 5–7 minutes, gently crushing the berries.
- Strain: Let the mixture cool slightly, then strain if you want a smooth syrup. Chill.
- Make the coconut cloud: Whisk or froth coconut cream, sweetener, vanilla, and coconut milk until light and airy.
- Build the drinks: Fill two glasses with ice. Add 2–3 tbsp blueberry syrup to each glass.
- Pour in the coconut water and coconut milk, then slowly top with sparkling water.
- Add the cloud: Spoon the whipped coconut mixture generously over the top.
- Garnish with fresh blueberries and a lime slice. Serve immediately.
