  • ¼ cup (60 ml) bourbon

Instructions

1. Whisk the egg yolks: In a mixing bowl, whisk the egg yolks and brown sugar until smooth, thick, and slightly pale.
2. Warm the milk and cream: In a saucepan, combine the milk, heavy cream, cinnamon, and nutmeg. Heat over medium-low heat until steaming, but do not boil.
3. Temper the eggs: Slowly pour about half a cup of the warm milk mixture into the egg yolks while whisking continuously. Gradually whisk the egg mixture back into the saucepan.
4. Cook until creamy: Stir constantly over low heat until the mixture reaches 160°F (71°C) and lightly coats the back of a spoon. Avoid boiling or overheating.
5. Add the butterscotch: Remove from the heat and stir in the butterscotch sauce and vanilla extract until fully combined.
6. Add the bourbon: Allow the mixture to cool slightly, then stir in the bourbon. For a nonalcoholic version, omit the bourbon.
7. Chill or serve warm: Serve warm in heatproof mugs, or refrigerate until thoroughly chilled for a cold, creamy eggnog.
8. Garnish and enjoy: Top with whipped cream, a drizzle of butterscotch sauce, and a light dusting of nutmeg.
