Ingredients
- 6–8 lamb chops (bone-in preferred)
- 2 tbsp olive oil
- 1 large onion, sliced
- 4 garlic cloves, minced

- 1 tbsp tomato paste
- 1 tsp dried rosemary (or 1 tbsp fresh)
- 1 tsp dried thyme
- 1 bay leaf
- Salt & black pepper to taste

Instructions
1. Sear the lamb
- Season lamb chops with salt and pepper.
- Heat oil in a pan and sear chops 2–3 minutes per side until browned.
- Remove and set aside.
2. Cook aromatics
- In the same pan, sauté onions until soft.
- Add garlic and cook for 1 minute.
3. Build the sauce
- Stir in tomato paste, rosemary, thyme, and bay leaf.
- Pour in wine (if using) and let it reduce for 2–3 minutes.
- Add broth and mix well.
4. Braise the lamb
- Return lamb chops to the pan.
- Cover and simmer on low heat for 45–60 minutes until tender.
5. Finish
- Stir in butter for a glossy sauce (optional).
- Adjust salt and pepper.
6. Serve
- Serve hot with mashed potatoes, rice, or roasted vegetables.
