Brown Butter Baklava Blondie Bars

Brown Butter Baklava Blondie Bars Recipe

  • Author: David Andersson
  • Total Time: 55 minutes
  • Yield: 16 bars 1x

Description

To understand why this dessert works so exceptionally well, it helps to break down the two famous treats that inspired it. A classic blondie is a dense, fudgy dessert bar closely related to the traditional chocolate brownie, but built upon brown sugar, butter, and vanilla rather than melted chocolate or cocoa powder. When made correctly, a blondie offers a deep molasses and butterscotch flavor profile with an addictively chewy texture.

Ingredients

Scale

For the Brown Butter Blondies

  • 170 g unsalted butter
  • 200 g brown sugar
  • 50 g granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 180 g all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground cardamom

For the Baklava Nut Filling

  • 100 g walnuts, finely chopped
  • 75 g pistachios, finely chopped
  • 50 g almonds, finely chopped
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • ¼ tsp cardamom
  • Pinch of salt

For the Honey Syrup

  • 80 g honey
  • 40 g granulated sugar
  • 40 ml water
  • 1 tsp lemon juice
  • ½ tsp rose water or orange blossom water (optional)

For the Topping

  • 50 g pistachios, chopped
  • 2–3 sheets phyllo pastry
  • 1 tbsp melted butter
  • A pinch of cinnamon

Instructions

1. Brown the butter
Melt the butter in a saucepan over medium heat. Continue cooking, stirring occasionally, until it becomes golden brown and smells nutty. Remove from the heat and let it cool for about 10 minutes.

2. Prepare the nut mixture
Combine the walnuts, pistachios, almonds, brown sugar, cinnamon, cardamom, and salt in a bowl.

3. Make the blondie batter
Whisk the brown butter, brown sugar, and granulated sugar together. Add the eggs and vanilla and whisk until smooth.

Add the flour, baking powder, salt, cinnamon, and cardamom. Mix just until combined—don’t overmix.

4. Layer the bars
Line an 8 × 8-inch (20 × 20 cm) baking pan with parchment paper.

Spread half of the blondie batter into the pan. Sprinkle the nut mixture evenly over it, then cover with the remaining batter.

5. Add the phyllo topping
Lay the phyllo sheets loosely over the surface, brushing each sheet lightly with melted butter. Sprinkle with chopped pistachios and a little cinnamon.

6. Bake
Bake at 175°C / 350°F for 30–35 minutes, or until the edges are golden and the center is just set. Don’t overbake—the center should remain soft and chewy.

7. Make the honey syrup
While the blondies bake, combine honey, sugar, water, and lemon juice in a small saucepan. Simmer for 3–4 minutes. Remove from heat and stir in rose water or orange blossom water if using.

8. Finish
Let the blondies cool for about 10 minutes, then drizzle the warm honey syrup over the top. Allow them to cool completely before slicing.

Notes

For the best texture, let the blondie bars cool completely before slicing. The combination of brown butter, crunchy nuts, warm spices, and honey syrup creates a rich baklava-inspired flavor. You can also add extra pistachios or a light drizzle of honey before serving.
