Instructions

  • Brown the butter:
    Melt the butter in a saucepan over medium heat. Continue cooking, stirring frequently, until it turns golden brown and smells nutty, about 5–8 minutes. Remove from heat and let cool for about 10 minutes.
  • Prepare the oven:
    Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
  • Mix the wet ingredients:
    Whisk the browned butter, brown sugar, and granulated sugar together. Add the eggs and egg yolk, whisking until smooth. Stir in the vanilla and bourbon.
  • Add the dry ingredients:
    In a separate bowl, whisk together the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  • Add extras:
    Fold in the white chocolate and nuts if using.
  • Bake:
    Spread the batter evenly in the prepared pan. Bake for 25–30 minutes, or until the edges are golden brown and the center is set but still slightly soft.
  • Cool:
    Sprinkle with flaky sea salt if desired. Allow the blondies to cool completely in the pan before slicing into squares.

Notes

For the fudgiest texture, don’t overbake the blondies. The center should look just slightly underdone when you take them out of the oven—they will continue to set as they cool.
