Description
A butter board is a contemporary, interactive appetizer concept where softened butter is spread across a food-safe wooden board or serving platter in decorative swoops, swirls, and waves. Instead of serving cold butter pats alongside bread, this method treats butter as a blank canvas for bold seasonings, aromatic herbs, textures, and sweet or acidic drizzles.
Ingredients
For the butter board
-
225 g (1 cup) unsalted butter, softened
-
1 whole garlic bulb
-
2 tbsp olive oil
-
3 tbsp honey
-
1 tsp fresh rosemary, finely chopped
-
1 tsp fresh thyme leaves
-
1 tbsp fresh parsley, chopped
-
½ tsp flaky sea salt, plus more to taste
-
¼ tsp freshly ground black pepper
-
¼ tsp red pepper flakes (optional)
-
1 tsp lemon zest (optional)
For serving
-
1 baguette or rustic sourdough loaf
-
Crackers or breadsticks
-
Fresh grapes or sliced apples (optional)
Instructions
1. Preheat the oven. Set the oven to 200°C (400°F).
2. Roast the garlic. Slice the top off the garlic bulb to expose the cloves. Drizzle with olive oil and wrap in foil. Roast for 35–40 minutes, until the cloves are soft, golden, and fragrant. Allow to cool slightly.
3. Prepare the herb honey. In a small bowl, combine the honey, chopped rosemary, thyme, black pepper, and red pepper flakes, if using. Let the mixture sit while the garlic roasts so the flavors can infuse.
4. Prepare the butter. Place the softened butter in a bowl. Squeeze the roasted garlic cloves from their skins and mash them into a smooth paste. Fold the garlic into the butter with the parsley, lemon zest, and flaky sea salt.
5. Create the butter board. Spread the garlic butter in generous swoops across a clean serving board or large shallow platter, creating soft ridges and swirls.
6. Add the toppings. Drizzle the herb honey over the butter. Sprinkle with extra thyme, rosemary, flaky sea salt, and a little cracked black pepper.
7. Serve immediately. Arrange toasted baguette slices, sourdough, or crackers around the board. Let guests scoop up the butter and toppings with their bread.
Notes
Pair this butter board with warm sourdough, toasted baguette, seeded crackers, sliced pears, or a cheese platter. It also works beautifully alongside roasted vegetables or a charcuterie spread.
