Instructions

  1. Prepare the oven and pans: Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans. Line the bottoms with parchment paper.
  2. Toast the pecans: Spread the pecans on a baking sheet and toast for 5–7 minutes, until fragrant. Let them cool, then chop.
  3. Mix the dry ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Cream the butter and sugars: Beat the softened butter, granulated sugar, and brown sugar for 3–4 minutes, until light and fluffy.
  5. Add the eggs and vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla.
  6. Combine the batter: Add the dry ingredients in three additions, alternating with the buttermilk. Begin and end with the dry ingredients. Mix just until combined.

  2. Cool slightly: Remove from the heat and stir in vanilla and salt. Let the mixture cool until lukewarm.
  3. Finish the frosting: Gradually beat in the powdered sugar. Add a little cream or milk as needed until the frosting reaches a smooth, spreadable consistency.

Assemble the Cake

  1. Place one cake layer on a serving plate and spread with frosting.
  2. Add the second layer and frost the top. Place the final cake layer on top.
  3. Cover the entire cake with the remaining praline frosting.
  4. Sprinkle the top and sides with toasted pecans. For an extra praline finish, drizzle a little warm caramel or praline sauce over the top.
