The Ultimate Guide to Perfect Butter Swim Biscuits

  • Author: David Andersson
  • Total Time: 30–35 minutes
  • Yield: 9 biscuits 1x

Description

A butter swim biscuit is a classic American quick bread that skips the tedious folding, rolling, and cutting associated with traditional baking. Instead of cutting cold butter into dry ingredients to create flaky layers, melted butter is poured directly into the bottom of a baking dish.

Ingredients

Scale
  • 2½ cups (315 g) all-purpose flour
  • 4 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 2 cups (480 ml) buttermilk
  • ½ cup (113 g) unsalted butter, melted

Instructions

  • Preheat the oven to 450°F (230°C).
  • Melt the butter and pour it into an 8×8-inch (20×20 cm) baking dish. Spread it evenly.
  • In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  • Pour in the buttermilk and gently stir until a sticky, shaggy dough forms. Do not overmix.
  • Carefully transfer the dough into the baking dish, spreading it gently toward the edges. The dough will sit on top of the melted butter.
  • Using a knife or spatula, score the dough into 9 squares. Don’t worry if the butter comes up around the dough.
  • Bake for 20–25 minutes, until the top is golden brown and the center is cooked through.
  • Let the biscuits rest for 5–10 minutes, then cut along the scored lines and serve warm.

Notes

These Butter Swim Biscuits are incredibly easy to make—no rolling or cutting required! They bake in melted butter, creating beautifully golden, crispy edges with a soft, fluffy center. Serve them warm with butter, honey, or your favorite jam for a comforting homemade treat.
