  • Salt and pepper to taste

For the Rice Bowl

  • 2 cups cooked white or brown rice
  • 1 cup corn kernels (grilled or boiled)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1 cup cucumber, diced
  • ¼ cup red onion, finely sliced
  • 2 tablespoons chopped parsley or cilantro

Optional Sauce

  • 2 tablespoons mayo or Greek yogurt
  • 1 teaspoon hot sauce
  • 1 teaspoon lemon juice

Instructions

  • Season Salmon: Rub salmon fillets with Cajun seasoning, salt, and pepper.
  • Cook Salmon: Heat olive oil in a pan over medium-high heat. Cook salmon skin-side down for 4–5 minutes, then flip and cook another 3–4 minutes until done.
  • Make Garlic Butter: In the same pan, melt butter and add garlic. Cook for 1 minute, then add lemon juice.
  • Coat Salmon: Spoon garlic butter over cooked salmon.
  • Assemble Bowls: Add rice to each bowl, then top with salmon, corn, tomatoes, cucumber, avocado, and red onion.
  • Finish: Drizzle with garlic butter and optional sauce. Garnish with herbs and lemon wedges
