Caramel Apple Crisp Bread Pudding is a decadent dessert that combines three beloved elements:
The custardy, soul-soothing texture of a classic bread pudding (bread cubes soaked in a sweet custard, baked until tender),
The sweet-spiced, oat-and-flour crisp topping characteristic of an apple crisp (or apple crumble),
And rich caramel sauce, drizzled over the top for an extra layer of indulgence.
Ingredients
Bread Pudding Base
6 cups cubed bread (brioche, challah, or French bread), slightly stale
3 large eggs
1 ½ cups milk (whole or 2%)
1 cup heavy cream (or half & half)
½ cup brown sugar
¼ cup granulated sugar
1 tbsp vanilla extract
1 tsp cinnamon
¼ tsp nutmeg
Pinch of salt
Caramel Apple Filling
3–4 medium apples, peeled & diced (Granny Smith, Honeycrisp, or mix)
2 tbsp butter
3 tbsp brown sugar
½ tsp cinnamon
Splash of lemon juice
Optional: 2 tbsp caramel sauce
Crisp Topping
½ cup old-fashioned oats
½ cup flour
â…“ cup brown sugar
½ tsp cinnamon
¼ tsp salt
6 tbsp cold butter, cubed
To Serve
Warm caramel sauce (store-bought or homemade)
Vanilla ice cream or whipped cream (optional)
Instructions
1. Prep
Preheat oven to 350°F (180°C).
Grease your baking dish.
2. Cook the Apples
In a skillet, melt butter over medium heat.
Add apples, brown sugar, cinnamon, and lemon juice.
Cook 5–7 mins until apples soften slightly but don’t turn mushy.
Optional: stir in a spoonful of caramel for extra richness. Let cool slightly.
3. Make Custard
Whisk eggs, milk, cream, sugars, vanilla, cinnamon, nutmeg, and salt.
4. Assemble Bread Pudding
Add bread cubes to a large bowl.
Pour custard over bread and gently toss. Let soak 10–15 mins.
Fold in cooked apples, reserving a few for topping.
Pour into baking dish.
5. Add Crisp Topping
In a bowl, mix oats, flour, brown sugar, cinnamon, and salt.
Cut in cold butter with fork or fingers until crumbly.
Sprinkle evenly over bread pudding.
Add reserved apples on top if desired.
6. Bake
Bake 45–55 mins, until top is golden and center is set but still soft.
If browning too fast, cover loosely with foil.
7. Finish & Serve
Let cool for 10–15 mins.
Drizzle with warm caramel sauce before serving.
Serve with ice cream or whipped cream for maximum happiness.
