  • Author: David Andersson
  • Total Time: 4 hours 5 minutes (including chilling)
  • Yield: 2 servings 1x
  • Diet: Vegetarian

Description

At its most basic level, Chai Spiced Chia Seed Pudding is a cold, set dish made by soaking chia seeds in a liquid—usually a milk of some kind—until they expand and create a gel-like consistency similar to traditional tapioca. What elevates this particular version is the infusion of “Masala Chai” spices.

Ingredients

Scale
  • 1/4 cup chia seeds
  • 1 cup milk (dairy or plant-based: almond, oat, or soy)
  • 12 tbsp maple syrup or honey (to taste)
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cardamom
  • 1/8 tsp ground cloves
  • Pinch of ground nutmeg
  • Optional toppings: chopped nuts, granola, fresh fruit, or coconut flakes

Instructions

  • In a bowl or jar, combine chia seeds, milk, maple syrup, and vanilla extract.
  • Add all the spices: cinnamon, ginger, cardamom, cloves, and nutmeg. Mix well.
  • Stir thoroughly and let sit for 5 minutes. Stir again to prevent clumping.
  • Cover and refrigerate for at least 3–4 hours, or overnight for best results.
  • Before serving, give it a good stir. Top with your choice of nuts, fruit, or coconut flakes.
