At its most basic level, Chai Spiced Chia Seed Pudding is a cold, set dish made by soaking chia seeds in a liquid—usually a milk of some kind—until they expand and create a gel-like consistency similar to traditional tapioca. What elevates this particular version is the infusion of “Masala Chai” spices.

- 1 cup milk (dairy or plant-based: almond, oat, or soy)
- 1–2 tbsp maple syrup or honey (to taste)
- 1 tsp vanilla extract

- 1/4 tsp ground cardamom
- 1/8 tsp ground cloves
- Pinch of ground nutmeg

Instructions
- In a bowl or jar, combine chia seeds, milk, maple syrup, and vanilla extract.
- Add all the spices: cinnamon, ginger, cardamom, cloves, and nutmeg. Mix well.
- Stir thoroughly and let sit for 5 minutes. Stir again to prevent clumping.
- Cover and refrigerate for at least 3–4 hours, or overnight for best results.
- Before serving, give it a good stir. Top with your choice of nuts, fruit, or coconut flakes.
