Ingredients
1 lb (450 g) mini sweet peppers (about 10–12 peppers)
6 oz (170 g) cream cheese, softened
1 cup shredded cheddar cheese (or a mix of cheddar + Monterey Jack)
4–5 slices bacon, cooked crispy and crumbled
2 green onions, finely chopped
½ tsp garlic powder
¼ tsp smoked paprika (optional, for extra depth)
Salt & pepper, to taste
Fresh parsley or chives, for garnish
Instructions
Preheat Oven:
Preheat to 400°F (200°C).
Line a baking sheet with parchment paper or foil for easy cleanup.
Prep the Peppers:
Slice each mini pepper in half lengthwise and remove seeds and membranes.
Arrange the pepper halves on the prepared baking sheet, cut side up.
