Description

Traditional spring rolls feature a light, delicate pastry wrapper wrapped around cabbage, carrots, pork, or shrimp. This recipe twists that classic formula by introducing melted mozzarella or cheddar cheese, which binds the chicken and vegetable filling together with a rich, creamy texture.

For the Filling

  • 300 g boneless chicken, finely chopped
  • 1 tbsp cooking oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup cabbage, finely shredded
  • ½ cup carrot, grated
  • ½ cup bell pepper, finely chopped
  • 1 tbsp soy sauce
  • 1 tsp chili sauce
  • ½ tsp black pepper
  • ½ tsp salt, or to taste
  • ½ tsp paprika
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tbsp chopped fresh coriander or spring onions

For Wrapping

  • 1012 spring roll wrappers
  • 2 tbsp all-purpose flour
  • 3 tbsp water

For Frying

  • Oil, as needed

Instructions

  • Cook the chicken: Heat oil in a pan over medium heat. Add onion and garlic and sauté for 1–2 minutes.
  • Add the chopped chicken and cook for 5–7 minutes, until completely cooked.
  • Add vegetables: Stir in cabbage, carrot, and bell pepper. Cook for 2–3 minutes, keeping the vegetables slightly crisp.
  • Add soy sauce, chili sauce, black pepper, salt, and paprika. Mix well and cook for another minute.
  • Remove from heat and allow the filling to cool completely. Mix in the shredded cheese and coriander or spring onions.
  • Prepare the sealing paste: Mix flour and water to make a smooth, thick paste.
  • Fill the rolls: Place one spring roll wrapper on a flat surface. Add about 2 tablespoons of filling near one corner. Fold the sides inward and roll tightly. Seal the edge with the flour paste.
  • Fry: Heat oil over medium heat. Fry the spring rolls in batches for 3–4 minutes, turning occasionally, until golden and crispy.
  • Drain on paper towels and serve hot with sweet chili sauce, garlic mayo, or ketchup.

Notes

For the crispiest spring rolls, make sure the filling is completely cool before wrapping. You can also air-fry or bake them for a lighter version.
