Ingredients

Scale

For the Filling:

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 2 cups fresh spinach, roughly chopped (or 1 cup thawed frozen spinach, squeezed dry)

  • 1 cup canned artichoke hearts, drained and chopped

  • 4 oz (½ cup) cream cheese, softened

  • ½ cup sour cream (or Greek yogurt)

  • ½ cup grated Parmesan cheese

  • 1 cup shredded mozzarella cheese

  • ½ tsp red pepper flakes (optional)

  • Salt & pepper, to taste

For the Dough:

  • 1 pizza dough (store-bought or homemade, about 1 lb)

  • 1 egg, beaten (for egg wash)

  • 1 tbsp butter, melted (optional for brushing)

Optional for Serving:

  • Marinara sauce for dipping

Instructions

  1. Preheat the Oven

    • Set oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Make the Filling

    • Heat olive oil in a skillet over medium heat.

    • Add garlic; sauté for 30 seconds.

    • Add spinach and cook until wilted (1–2 minutes).

    • Stir in chopped artichokes, cream cheese, sour cream, Parmesan, and ½ cup of mozzarella.

    • Season with salt, pepper, and red pepper flakes.

    • Mix until creamy and well combined. Remove from heat and let cool slightly.

  3. Assemble the Stromboli

    • Roll pizza dough into a 12×14-inch rectangle on a lightly floured surface.

    • Spread the spinach-artichoke filling evenly, leaving a 1-inch border all around.

    • Sprinkle remaining mozzarella over the top.

    • Starting from the long side, roll tightly like a jelly roll.

    • Pinch seams and tuck ends to seal.

    • Place seam-side down on the prepared baking sheet.

  4. Finish & Bake

    • Brush the top with beaten egg (and melted butter if using).

    • Cut 3–4 small slits on top for steam to escape.

    • Bake 25–30 minutes, until golden brown and puffed.

  5. Cool & Slice

    • Let rest for 5–10 minutes before slicing.

    • Serve with warm marinara sauce on the side for dipping.
