4 oz (½ cup) cream cheese, softened
½ cup sour cream (or Greek yogurt)
½ cup grated Parmesan cheese
1 cup shredded mozzarella cheese
½ tsp red pepper flakes (optional)
Salt & pepper, to taste
For the Dough:
1 pizza dough (store-bought or homemade, about 1 lb)
1 egg, beaten (for egg wash)
1 tbsp butter, melted (optional for brushing)
Optional for Serving:
Marinara sauce for dipping
Instructions
Preheat the Oven
Set oven to 400°F (200°C) and line a baking sheet with parchment paper.
Make the Filling
Heat olive oil in a skillet over medium heat.
Add garlic; sauté for 30 seconds.
Add spinach and cook until wilted (1–2 minutes).
Stir in chopped artichokes, cream cheese, sour cream, Parmesan, and ½ cup of mozzarella.
Season with salt, pepper, and red pepper flakes.
Mix until creamy and well combined. Remove from heat and let cool slightly.
Assemble the Stromboli
Roll pizza dough into a 12×14-inch rectangle on a lightly floured surface.
Spread the spinach-artichoke filling evenly, leaving a 1-inch border all around.
Sprinkle remaining mozzarella over the top.
Starting from the long side, roll tightly like a jelly roll.
Pinch seams and tuck ends to seal.
Place seam-side down on the prepared baking sheet.
Finish & Bake
Brush the top with beaten egg (and melted butter if using).
Cut 3–4 small slits on top for steam to escape.
Bake 25–30 minutes, until golden brown and puffed.
Cool & Slice
Let rest for 5–10 minutes before slicing.
Serve with warm marinara sauce on the side for dipping.
