Instructions

  • In a large mixing bowl, beat together the softened butter, tahini, brown sugar, and granulated sugar until light and creamy.
  • Mix in the egg and vanilla extract until fully incorporated.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until no dry streaks remain.
  • Fold in the chocolate chunks and sesame seeds, if using.
  • Cover the dough and chill for 30 minutes to help prevent spreading.
  • Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • Scoop about 2 tablespoons of dough per cookie and place them 2 inches apart on the prepared baking sheets.
  • Bake for 10–12 minutes, until the edges are lightly golden while the centers remain soft.
  • Sprinkle with flaky sea salt immediately after baking, if desired.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
