Traditional churros are made from a simple choux paste piped directly into hot frying oil and immediately rolled in a mixture of sugar and ground cinnamon. For the cookies
- ½ cup (113 g) unsalted butter, softened
- ¾ cup (150 g) granulated sugar
- ¼ cup (50 g) light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1½ cups (190 g) all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- ½ tsp ground cinnamon
For the cinnamon-sugar coating
- ¼ cup (50 g) granulated sugar
- 1½ tsp ground cinnamon
Instructions
- Preheat: Heat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream: Beat the softened butter, granulated sugar, and brown sugar for 2–3 minutes until light and fluffy.
- Add wet ingredients: Beat in the egg and vanilla until combined.
- Mix dry ingredients: In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Combine: Gradually add the dry ingredients to the wet mixture. Mix just until a soft dough forms. Do not overmix.
- Make coating: Combine the sugar and cinnamon in a small bowl.
- Shape: Scoop about 1½ tablespoons of dough per cookie and roll into balls. Coat generously in cinnamon sugar.
- Bake: Place cookies about 2 inches apart and bake for 9–11 minutes. The edges should be lightly golden while the centers still look slightly soft.
- Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
