When these seeds are soaked in liquid, they expand and create a gel-like coating, resulting in a texture that is surprisingly similar to tapioca pudding.

Instructions
- In a bowl or jar, whisk together the milk, cocoa powder, sweetener, vanilla, and salt until smooth.
- Stir in the chia seeds.
- Let it sit for 5–10 minutes, then stir again to prevent clumping.
- Cover and refrigerate for at least 2–4 hours (or overnight).
- Once thick and pudding-like, give it a stir and serve.
