Ingredients
- 1 can (15 oz) chickpeas, drained & rinsed
- 1/4 cup peanut butter (or almond butter)
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 1/4 tsp salt
- 2–3 tbsp milk (as needed for texture)
- 1/3 cup chocolate chips
Instructions
1. Prepare chickpeas
- Pat dry and remove any loose skins (optional for smoother texture)
2. Blend base
- In a food processor, blend chickpeas until smooth
- Add peanut butter, maple syrup, vanilla, and salt
- Blend again until creamy
3. Adjust texture
- Add milk 1 tbsp at a time until it becomes cookie-dough-like
4. Add chocolate chips
- Stir in chocolate chips (don’t blend them)
5. Chill & serve
- Refrigerate for 20–30 minutes for best texture
- Eat by spoon or roll into small bites
