Description
At its core, this dish is a modern twist on traditional Mexican street tacos. Instead of using beef or pork, we use hearty cubes of sweet potato as the star ingredient. The “chipotle” element comes from smoked jalapeños, which provide a deep, earthy heat, while the “lime” adds a bright, acidic finish that cuts through the richness of the roasted vegetables.
Ingredients
Sweet Potatoes

2 large sweet potatoes, peeled and cubed

2 tbsp olive oil

1–2 chipotle peppers in adobo, minced
(or 1–2 tsp chipotle powder for less heat) -
1 tsp smoked paprika

1 tsp ground cumin

½ tsp garlic powder

Salt & black pepper, to taste
Lime Finish

Zest of 1 lime

Juice of 1 lime
For Serving

Small corn or flour tortillas, warmed

Shredded red cabbage or slaw mix

Avocado slices or guacamole

Fresh cilantro

Crumbled cotija or feta cheese (optional)
Optional Chipotle Lime Sauce

½ cup Greek yogurt or sour cream

1 tbsp mayo (optional, for richness)

1–2 tsp adobo sauce (from the chipotle can)

1 tbsp lime juice

Salt to taste
Instructions

Roast the Sweet Potatoes

Preheat oven to 425°F (220°C).

Toss sweet potatoes with olive oil, chipotle, paprika, cumin, garlic powder, salt, and pepper.

Spread on a baking sheet in a single layer.

Roast 25–30 minutes, flipping halfway, until tender and crispy on edges.

Add Lime

Remove from oven and immediately toss with lime zest and lime juice.

Make the Sauce (Optional)

Mix all sauce ingredients in a small bowl until smooth.

Adjust spice and lime to taste.

Assemble Tacos

Fill tortillas with roasted sweet potatoes.

Top with cabbage, avocado, cilantro, cheese, and drizzle with sauce.
