Ingredients
1 cup unsalted butter
1 cup semisweet chocolate chips
3/4 cup granulated sugar
4 large eggs
1/2 teaspoon vanilla extract
1/4 teaspoon salt
3/4 cup all-purpose flour
1/4 cup unsweetened cocoa powder
Powdered sugar (for dusting)
1 cup fresh raspberries
Instructions
Preheat the oven to 350°F (175°C) and grease a bouchon or mini muffin tin.
Melt the butter and chocolate chips together in a heatproof bowl over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
In a mixing bowl, whisk together the granulated sugar and eggs until thick and pale. Add vanilla extract and salt, mixing to combine.
Slowly incorporate the melted chocolate mixture into the eggs and sugar, stirring until smooth.
Sift the flour and cocoa powder into the mixture and fold gently until no streaks remain.
Spoon the batter into the prepared tin, filling each cavity about two-thirds full.
Bake for 15-18 minutes, or until the edges are set and the centers are slightly soft. Allow to cool in the tin for 10 minutes before removing.
Dust the tops with powdered sugar and serve each bouchon with fresh raspberries.
