  • 2 ¼ tsp (1 packet) active dry yeast

  • ½–1 tsp chili powder (adjust to taste; use ancho or cayenne for heat)

  • 1 tsp salt

  • 1 ¼ cups (300 ml) warm water (110°F / 45°C)

  • 3 tbsp olive oil (or melted butter)

  • 1 tsp vanilla extract

Optional Mix-Ins

  • ½ cup dark chocolate chunks or chips

  • ¼ cup chopped toasted nuts (almonds, pecans, hazelnuts)


Instructions

1. Activate the Yeast

  1. In a small bowl, combine warm water and brown sugar.

  2. Sprinkle yeast over top, stir lightly, and let sit for 5–10 minutes until foamy.


2. Make the Dough

  1. In a large mixing bowl, whisk flour, cocoa, chili powder, cinnamon, and salt.

  2. Add yeast mixture, oil, and vanilla. Mix until a shaggy dough forms.

  3. Knead on a floured surface (or in a mixer with dough hook) for 8–10 minutes, until smooth and elastic.

  4. If using, knead in chocolate chunks and nuts at the end.


3. First Rise

  • Place dough in an oiled bowl, cover, and let rise 1–1.5 hours, until doubled.


4. Shape & Second Rise

  1. Punch dough down and shape into a round or loaf.

  2. Place on a parchment-lined baking sheet (or in a loaf tin).

  3. Cover and rise another 30–45 minutes.


5. Bake

  1. Preheat oven to 375°F (190°C).

  2. Bake 30–35 minutes, until loaf sounds hollow when tapped on the bottom.

  3. Cool at least 20 minutes before slicing.
