Description
A classic chocolate frosted donuts recipe centers around a light, airy yeast-risen dough that is fried until golden brown and dipped into a smooth cocoa glaze. Unlike dense cake variants, yeast-raised dough relies on proper fermentation to form tiny air pockets, yielding a pillow-soft interior with a delicate crust.
Ingredients
Scale
For the donuts
- 2¼ cups (280 g) all-purpose flour
- 2¼ tsp (7 g) instant yeast
- ¼ cup (50 g) granulated sugar
- ½ tsp salt
- ¾ cup (180 ml) warm milk
- 1 large egg
- 2 tbsp (28 g) unsalted butter, melted
- 1 tsp vanilla extract
- Oil, for frying
Chocolate frosting
- 1 cup (120 g) powdered sugar
- 3 tbsp unsweetened cocoa powder
- 2–3 tbsp milk
- ½ tsp vanilla extract
- 1 tbsp melted butter
Instructions
- Make the dough: Mix flour, yeast, sugar, and salt. Add warm milk, egg, melted butter, and vanilla. Knead for 8–10 minutes until soft and slightly tacky.
- First rise: Cover and let rise in a warm place for 1–1½ hours, or until doubled.
- Shape: Roll dough to about 1 cm (½ inch) thick. Cut into donut shapes.
- Second rise: Place on parchment, cover, and let rise for 30–45 minutes.
- Fry: Heat oil to 175°C / 350°F. Fry donuts about 1–2 minutes per side, until golden. Drain on paper towels.
- Make frosting: Whisk powdered sugar, cocoa, milk, vanilla, and melted butter until smooth. Add a little more milk if needed.
- Frost: Dip the cooled donuts into the chocolate frosting. Let the frosting set for about 10 minutes.
Notes
For extra-soft donuts, don’t add too much flour while kneading. The dough should remain slightly sticky but manageable.
