Description
At its heart, Christmas spiced duck with orange sauce is a luxurious poultry dish designed to highlight the rich, savory profile of whole duck paired with bright, aromatic accents. Duck meat possesses a deep, naturally dark, and rich flavor that sets it apart from chicken or turkey.
Ingredients
For the Christmas Spiced Duck
-
1 whole duck (approximately 2–2.5 kg), thawed if frozen
-
2 tsp salt
-
1 tsp freshly ground black pepper
-
1 tsp ground cinnamon
-
½ tsp ground ginger
-
¼ tsp ground cloves
-
1 tsp paprika
-
2 garlic cloves, crushed
-
1 tbsp olive oil
-
1 orange, quartered
-
1 small onion, quartered
-
2 sprigs fresh rosemary
-
3 sprigs fresh thyme
-
2 star anise
For the Orange Sauce
-
250 ml fresh orange juice
-
Zest of 1 orange
-
2 tbsp brown sugar
-
2 tbsp honey
-
2 tbsp orange marmalade
-
2 tbsp red wine vinegar or apple cider vinegar
-
150 ml chicken stock
-
1 cinnamon stick
-
2 whole cloves
-
1 tbsp unsalted butter
-
1 tsp cornstarch mixed with 1 tbsp cold water (optional, for thickening)
-
Pinch of salt and black pepper
Instructions
1. Prepare the Duck
-
Preheat the oven to 180°C (160°C fan) / 350°F.
-
Remove the giblets from the duck cavity, if present. Pat the duck thoroughly dry with paper towels.
-
Using a sharp skewer or knife tip, prick the skin all over the breast and thighs without piercing deeply into the meat. This helps the fat render during roasting.
-
Mix the salt, black pepper, cinnamon, ground ginger, cloves, paprika, crushed garlic, and olive oil in a small bowl.
-
Rub the spice mixture evenly over the duck, including the legs and cavity.
-
Stuff the cavity with the orange quarters, onion, rosemary, thyme, and star anise.
2. Roast the Duck
-
Place the duck breast-side up on a rack inside a roasting pan.
-
Roast for approximately 1 hour 45 minutes to 2 hours, depending on its size. Carefully drain the rendered fat from the pan periodically to prevent excessive smoking.
-
If the skin begins browning too quickly, loosely cover the duck with foil.
-
For extra-crispy skin, increase the oven temperature to 220°C (200°C fan) / 425°F for the final 10–15 minutes, watching carefully to prevent burning.
-
Check the internal temperature with a meat thermometer in the thickest part of the thigh, away from the bone. For food safety, cook poultry to 74°C (165°F).
-
Transfer the duck to a carving board and rest for 15–20 minutes before carving.
3. Make the Christmas Orange Sauce
-
While the duck roasts, combine the orange juice, orange zest, brown sugar, honey, marmalade, vinegar, chicken stock, cinnamon stick, and cloves in a saucepan.
-
Bring to a gentle boil over medium heat, stirring until the sugar dissolves.
-
Reduce the heat and simmer for 15–20 minutes, until the sauce reduces and develops a glossy consistency.
-
Remove the cinnamon stick and cloves.
-
For a thicker sauce, stir in the cornstarch slurry gradually and simmer for 1–2 minutes.
-
Remove from the heat and whisk in the butter for a silky finish. Season with a pinch of salt and black pepper.
4. Carve and Serve
-
Remove the orange, onion, and herbs from the duck cavity.
-
Separate the legs and thighs, then slice the breast meat into portions.
-
Arrange the duck on a warm serving platter.
-
Spoon a little orange sauce over the duck or serve it in a separate gravy boat.
-
Garnish with fresh rosemary sprigs and thin orange slices for a festive presentation.
