Christmas Tree Pinecone Almond Cheese Ball

  • Author: David Andersson
  • Total Time: 2 hours 25 minutes
  • Yield: 12 servings 1x
  • Diet: Vegetarian

Description

At its core, this festive recipe is a cold, seasoned dairy spread. It features a harmonious blend of softened cream cheese, sharp aged cheddar, and freshly grated Parmesan. The dairy base gets an extra splash of sour cream for smoothness. Fresh herbs like parsley, chopped chives, garlic, onion, and smoked paprika elevate the entire profile.

Ingredients

Scale

For the cheese ball

  • 450 g (16 oz) cream cheese, softened

  • 1 cup (100 g) finely shredded sharp cheddar cheese

  • ½ cup (50 g) grated Parmesan cheese

  • 2 tbsp sour cream

  • 2 tbsp fresh parsley, finely chopped

  • 1 tbsp fresh chives, finely chopped

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp smoked paprika

  • ¼ tsp freshly ground black pepper

  • ¼ tsp salt, or to taste

For the pinecone decoration

  • 1½–2 cups sliced almonds

  • 2–3 fresh rosemary sprigs

  • 1 small yellow bell pepper or cheddar slice, for a star-shaped topper

  • A few pomegranate seeds (optional, for festive color)

For serving

  • Crackers

  • Toasted baguette slices

  • Pretzel sticks

  • Fresh vegetable sticks

Instructions

1. Prepare the cheese mixture. In a large bowl, combine the softened cream cheese, cheddar, Parmesan, sour cream, parsley, chives, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix until smooth and evenly combined.
2. Shape the cheese ball. Transfer the mixture onto a sheet of plastic wrap. Shape it into a tall, tapered cone resembling a Christmas tree. Smooth the surface with a spatula or your hands.
3. Chill until firm. Wrap tightly and refrigerate for at least 2 hours, or until firm enough to hold its shape.
4. Add the almond scales. Unwrap the chilled cheese cone and place it on a serving platter. Starting at the bottom, insert sliced almonds into the cheese at a slight angle, overlapping each row as you work upward. Continue until the entire surface is covered, leaving the pointed top visible if desired.
5. Decorate the tree. Arrange rosemary sprigs around the base to resemble evergreen branches. Add a small star cut from yellow bell pepper or cheddar to the top. Scatter a few pomegranate seeds around the platter for a festive touch.
6. Serve. Arrange crackers, baguette slices, pretzels, and vegetable sticks around the cheese tree. Serve chilled so the tree retains its shape.

Notes

Place the cheese tree in the center of a large wooden board surrounded by crackers, grapes, sliced apples, olives, and toasted nuts. The combination of creamy cheese and crunchy almonds makes it both an attractive centerpiece and an easy appetizer for guests to share.
