Description
Creamy Chicken Alfredo Pasta is a pasta dish that features fettuccine (or any pasta of your choice) paired with a rich, creamy sauce made from butter, heavy cream, and Parmesan cheese. The dish is commonly topped with chicken, making it hearty and satisfying. The Alfredo sauce is velvety and smooth, providing a perfect complement to the tender chicken and pasta.
Ingredients
For the Pasta & Chicken
-
12 oz (340 g) fettuccine pasta (or any long pasta)
-
2 boneless, skinless chicken breasts
-
1 tsp salt
-
½ tsp black pepper
-
½ tsp garlic powder
-
1 tbsp olive oil
-
1 tbsp butter
For the Alfredo Sauce
-
3 tbsp unsalted butter
-
3 cloves garlic, minced
-
1½ cups (360 ml) heavy cream
-
1 cup (100 g) freshly grated Parmesan cheese (plus more for serving)
-
½ cup (120 ml) whole milk (optional, to thin sauce)
-
Salt & pepper to taste
-
Optional: pinch of nutmeg for depth
To Finish
-
Chopped parsley or basil (for garnish)
-
Extra Parmesan and cracked pepper
Instructions
1. Cook the pasta
-
Bring a large pot of salted water to a boil.
-
Cook pasta according to package directions until al dente.
-
Reserve 1 cup of pasta water, then drain and set aside.
2. Cook the chicken
-
Pat chicken dry and season both sides with salt, pepper, and garlic powder.
-
Heat olive oil and butter in a large skillet over medium-high heat.
-
Cook chicken for 4–5 minutes per side, until golden brown and cooked through (internal temp 165°F / 74°C).
-
Remove and let rest for a few minutes, then slice into strips.
3. Make the Alfredo sauce
-
In the same skillet (don’t clean it — those browned bits add flavor!), melt butter over medium heat.
-
Add garlic and sauté for 30 seconds until fragrant.
-
Pour in heavy cream and bring to a gentle simmer.
-
Lower the heat and stir in Parmesan cheese, whisking until melted and smooth.
-
If sauce feels too thick, whisk in a splash of milk or pasta water until creamy.
-
Season with salt, pepper, and a pinch of nutmeg if desired.
4. Combine
-
Add cooked pasta to the sauce, tossing to coat.
-
Add sliced chicken back to the pan.
-
Toss everything together for 1–2 minutes until the sauce clings beautifully to the noodles.
-
Add a splash of reserved pasta water as needed for a silky finish.
5. Serve
-
Garnish with fresh parsley, extra Parmesan, and cracked black pepper.
-
Serve immediately — Alfredo sauce thickens as it cools.
Notes
For extra flavor, sprinkle freshly grated Parmesan and chopped parsley over the creamy chicken Alfredo before serving. Pair it with garlic bread or a crisp side salad for a comforting, restaurant-style meal at home.
