Description

The Classic French Silk Chocolate Pie is an American dessert famous for its exceptionally smooth, velvety, mousse-like chocolate filling. Unlike traditional chocolate pudding pies or custard pies that rely on starch or flour thickeners cooked on a stove, a classic French silk pie gets its structure and ultra-light texture entirely through prolonged beating of butter, sugar, melted chocolate, and eggs.

Ingredients

Scale

For the crust

  • 1 9-inch pre-baked pie crust (pastry or chocolate cookie crust)

Chocolate filling

  • 115 g (½ cup) unsalted butter, softened
  • 150 g (¾ cup) granulated sugar
  • 115 g (4 oz) semisweet chocolate, melted and cooled
  • 1 tsp vanilla extract
  • 3 large pasteurized eggs, room temperature

Topping

  • 240 ml (1 cup) heavy whipping cream, cold
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract
  • Chocolate shavings or curls, for garnish

Instructions

  • Prepare the crust: Bake your pie crust according to its recipe and let it cool completely.
  • Melt the chocolate: Melt the semisweet chocolate gently in the microwave in 20–30 second intervals, stirring between each. Let it cool until barely warm.
  • Cream butter and sugar: Beat softened butter and sugar on medium-high speed for about 4–5 minutes, until very light and fluffy.
  • Add chocolate: Beat in the cooled melted chocolate and vanilla until smooth.
  • Add eggs: Add the pasteurized eggs one at a time, beating on high for about 4–5 minutes after each egg. The filling should become noticeably lighter, fluffy, and silky.
  • Fill the pie: Spoon the chocolate mixture into the cooled crust and smooth the top.
  • Chill: Refrigerate for at least 4 hours, preferably overnight.
  • Make whipped cream: Beat cold heavy cream, powdered sugar, and vanilla until stiff peaks form.
  • Finish: Spread or pipe the whipped cream over the pie and decorate with chocolate curls.

Notes

This French Silk Chocolate Pie is rich, creamy, and irresistibly smooth. For the best flavor and texture, chill it well before serving and finish with freshly whipped cream and chocolate shavings. Perfect for special occasions or whenever you’re craving a decadent chocolate dessert!
