- 2 cups frozen shredded hash browns, thawed and squeezed very dry
- 1 large egg
- ½ cup shredded cheddar cheese
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons finely chopped onion
- 2 tablespoons breadcrumbs
- 1 tablespoon melted butter
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper

Instructions
- Prepare the potatoes
Thaw the hash browns completely. Place them in a clean kitchen towel and squeeze out as much moisture as possible. This is important for crispy bites. - Make the mixture
In a bowl, combine the hash browns, egg, cheddar, Parmesan, onion, breadcrumbs, melted butter, garlic powder, onion powder, paprika, salt, and pepper. Mix until everything is evenly combined. - Shape the bites
Scoop out about 1 tablespoon of the mixture at a time and firmly form into small oval or rounded bites. Press them firmly so they don’t fall apart during cooking. - Preheat the air fryer
Preheat to 375°F (190°C) for about 3 minutes. -
Air fry
Lightly spray the basket with cooking spray. Arrange the bites in a single layer, leaving a little space between them. Spray the tops lightly with oil.Air fry at 375°F (190°C) for 10–14 minutes, turning halfway through, until golden brown and crisp.
- Serve
Let them cool for 2–3 minutes before serving. They’re especially good with ketchup, hot sauce, or a creamy dipping sauce.
Notes
You can also use refrigerated shredded potatoes instead of frozen hash browns—just squeeze them very dry before mixing.
