For the Rice

  • 3 cups cooked sushi or short-grain rice
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar

For the Seafood

  • 250 g (½ lb) shrimp, peeled, deveined, and chopped
  • 200 g (7 oz) cooked crab meat, shredded
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • ½ tsp paprika
  • ¼ tsp black pepper

For the Dynamite Sauce

  • ½ cup mayonnaise
  • 2 tbsp Japanese mayonnaise, optional
  • 12 tbsp sriracha
  • 1 tsp lemon juice
  • 1 tsp sesame oil
  • ½ tsp sugar

For the Topping

  • ½ cup shredded mozzarella cheese
  • 1 tbsp sesame seeds
  • 12 green onions, sliced
  • Furikake or nori flakes, optional

Instructions

  • Prepare the rice: Mix cooked rice with sesame oil, soy sauce, rice vinegar, and green onions.
  • Cook the seafood: Heat butter in a skillet over medium-high heat. Sauté garlic for 30 seconds. Add shrimp and cook for 2–3 minutes. Add crab, soy sauce, paprika, and black pepper. Cook for another 1–2 minutes.
  • Make the sauce: In a bowl, combine mayonnaise, Japanese mayonnaise, sriracha, lemon juice, sesame oil, and sugar. Mix until smooth.
  • Assemble: Preheat the oven to 200°C (400°F). Spread the rice in a baking dish and top with the crab and shrimp mixture.
  • Add the dynamite topping: Spread the spicy mayonnaise evenly over the seafood and sprinkle with mozzarella.
  • Bake: Bake for 12–15 minutes, until hot and bubbling. Broil for 1–2 minutes at the end for a lightly golden top.
  • Garnish: Sprinkle with sesame seeds, green onions, and furikake or nori flakes. Serve hot.

Notes

Use chilled leftover rice for the best texture, and adjust the amount of sriracha to suit your preferred level of spiciness.
