Ingredients
For the Salmon:
4 salmon fillets (about 6 oz / 170 g each)
Salt and black pepper, to taste
1 tbsp olive oil
1 tbsp butter
For the Creamy Sauce:
3 cloves garlic, minced
½ cup sun-dried tomatoes (in oil), drained and sliced
1 ½ cups baby spinach
1 cup heavy cream (or half-and-half for a lighter version)
½ cup grated Parmesan cheese
½ tsp Italian seasoning
¼ tsp crushed red pepper flakes (optional for spice)
Juice of ½ lemon (optional – brightens the flavor)
Instructions
Season and Sear the Salmon
Pat salmon fillets dry and season both sides with salt and pepper.
Heat olive oil and butter in a large skillet over medium-high heat.
Sear salmon skin-side up first for 4–5 minutes, then flip and cook another 3–4 minutes until golden and just cooked through.
Remove salmon and set aside on a plate.
Make the Creamy Sauce
In the same pan, lower heat to medium. Add minced garlic and sauté for 30 seconds until fragrant.
Stir in sun-dried tomatoes and cook for 1 minute.
Pour in the cream, Parmesan cheese, Italian seasoning, and red pepper flakes. Stir until the cheese melts and the sauce begins to thicken (about 2–3 minutes).
Add Spinach
Add spinach and stir until just wilted.
Taste and adjust seasoning (add salt, pepper, or a squeeze of lemon juice).
Combine with Salmon
Return salmon fillets to the pan, spooning the sauce over them.
Simmer gently for 2 minutes to reheat and let flavors meld.
Serve
Serve immediately, spooning extra sauce over each fillet.
Notes
For an extra burst of flavor, use the oil from the sun-dried tomatoes to sauté the garlic and salmon. You can serve this creamy Tuscan salmon over pasta, mashed potatoes, or steamed rice to soak up the rich sauce. Add a squeeze of lemon juice before serving for a bright, fresh finish.
