Description

Starting your day with a hot, nourishing meal is essential. These crispy air fryer breakfast potatoes and veggie hash are the ultimate comfort food. Golden-brown potatoes have a crackling outer skin. The interior remains pillowy and soft. Cubed potatoes blend with bell peppers, mushrooms, red onions, and spinach. This turns basic ingredients into a colorful feast. An air fryer uses rapid air technology. You get diner-style hash with very little oil.

  • 1 lb (450 g) baby potatoes, diced into ½-inch cubes
  • 1 small red bell pepper, diced
  • 1 small yellow bell pepper, diced
  • ½ medium red onion, diced
  • 1 cup (100 g) mushrooms, sliced
  • 1 cup (60 g) fresh spinach
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp ground cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp chili flakes, optional
  • 2 tbsp fresh parsley, chopped

Instructions

  • Preheat the air fryer: Preheat your air fryer to 400°F (200°C) for 3–5 minutes.
  • Season the potatoes: Add diced potatoes to a large bowl. Toss with 1½ tablespoons olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, and black pepper.
  • Air fry: Place the potatoes in the air-fryer basket in a relatively even layer. Cook for 12 minutes, shaking the basket halfway through.
  • Add the vegetables: Toss the bell peppers, onion, and mushrooms with the remaining olive oil. Add them to the potatoes.
  • Continue cooking: Air fry for another 8–10 minutes, shaking once or twice, until the potatoes are crispy and the vegetables are tender.
  • Add spinach: Add the spinach during the final 1–2 minutes of cooking, just until wilted.
  • Finish: Transfer the hash to a serving bowl and sprinkle with fresh parsley and chili flakes if desired.

Notes

For an extra hearty breakfast, top this crispy veggie hash with a fried egg, sliced avocado, or shredded cheese. You can also add your favorite hot sauce for a spicy kick.
