For the Chicken Karaage

  • 1 lb (450 g) halal boneless chicken thighs, cut into bite-sized pieces
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp grated ginger
  • 2 cloves garlic, minced
  • 1 tsp honey or sugar
  • ½ tsp black pepper
  • ½ cup potato starch or cornstarch
  • Oil, for frying

For the Rice Bowls

  • 3 cups cooked jasmine or short-grain rice
  • 1 cucumber, sliced
  • 1 carrot, julienned
  • ½ cup edamame, cooked
  • 2 green onions, sliced
  • 1 tbsp sesame seeds

Creamy Sauce

  • ¼ cup mayonnaise
  • 1 tbsp sriracha
  • 1 tsp honey
  • 1 tsp rice vinegar
  • 12 tsp water, as needed

Instructions

  • Marinate the chicken: Add chicken, soy sauce, sesame oil, ginger, garlic, honey, and black pepper to a bowl. Mix well and marinate for 20–30 minutes.
  • Coat: Remove the chicken from the marinade and coat each piece generously with potato starch or cornstarch.
  • Fry: Heat oil to about 350°F (175°C). Fry the chicken in batches for approximately 4–6 minutes, turning occasionally, until golden brown and cooked through.
  • Drain: Transfer the crispy chicken to a wire rack or paper towels to remove excess oil.
  • Make the sauce: Mix mayonnaise, sriracha, honey, and rice vinegar. Add a little water if needed to create a drizzling consistency.
  • Assemble: Divide warm rice between bowls. Add cucumber, carrot, edamame, and crispy chicken.
  • Finish: Drizzle with the spicy mayo and sprinkle with sesame seeds and green onions.
