For the Crispy Potatoes

  • lb (680 g) baby potatoes
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp ground cumin
  • ½ tsp Kashmiri chili powder
  • ¼ tsp black pepper

For the Chaat Toppings

  • ¾ cup plain Greek yogurt, whisked
  • 3 tbsp tamarind chutney
  • 2 tbsp mint-coriander chutney
  • ½ small red onion, finely chopped
  • 1 small tomato, finely diced
  • 2 tbsp fresh cilantro, chopped
  • 1 green chili, finely sliced, optional
  • ½ tsp chaat masala
  • ¼ tsp roasted cumin powder
  • ¼ cup sev
  • 2 tbsp pomegranate seeds
  • Fresh lemon or lime juice, to taste

Instructions

  • Cook the potatoes: Place the baby potatoes in a pot of salted water. Bring to a boil and cook for 12–15 minutes, or until fork-tender. Drain and let them cool slightly.
  • Smash: Preheat the oven to 425°F (220°C). Arrange the potatoes on a parchment-lined baking sheet. Gently smash each potato with the bottom of a glass or measuring cup until flattened.
  • Season: Brush with olive oil and sprinkle with salt, cumin, Kashmiri chili powder, and black pepper.
  • Bake: Roast for 30–35 minutes, flipping once halfway through, until deeply golden and crispy.
  • Assemble: Transfer the crispy potatoes to a serving platter. Spoon or drizzle over the yogurt, tamarind chutney, and mint-coriander chutney.
  • Add the red onion, tomato, cilantro, green chili, chaat masala, and roasted cumin powder.
  • Finish: Sprinkle generously with sev and pomegranate seeds. Add a squeeze of fresh lemon or lime juice.
  • Serve immediately while the potatoes are hot and crispy.

Notes

For extra crunch, add roasted peanuts or crushed papdi just before serving. You can also adjust the chutneys and chili according to your preferred level of sweetness and spice.
