Description
This dish is a classic Eastern Mediterranean flatbread traditionally known as man’oushe. Our crispy za’atar and olive oil flatbread features a simple lean yeast dough rolled thin to encourage maximum crispiness around the edges while keeping a light chew in the center.

For the Mashed Potatoes
- 2 lbs (900 g) Yukon Gold potatoes, peeled and cubed
- 4 tbsp unsalted butter
- ½ cup whole milk, warmed
- ¼ cup heavy cream
- Salt and black pepper, to taste
For the Steak Bites
- 1½ lbs (680 g) sirloin steak, cut into 1-inch cubes
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 5 cloves garlic, minced
- 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
- 1 tsp fresh parsley, chopped, plus more for garnish
- ½ tsp paprika
- Salt and black pepper, to taste
Instructions
1. Make the Mashed Potatoes
- Place the cubed potatoes in a large pot and cover with cold salted water.
- Bring to a boil and cook for 15–18 minutes, or until fork-tender.
- Drain well and return the potatoes to the hot pot for 1–2 minutes to remove excess moisture.
- Add the butter, warm milk, and heavy cream, then mash until smooth and creamy.
- Season with salt and black pepper. Cover and keep warm.
2. Cook the Steak Bites
- Pat the steak cubes dry with paper towels and season with salt, pepper, and paprika.
- Heat the olive oil in a large cast-iron skillet over medium-high heat.
- Add the steak cubes in a single layer without overcrowding. Cook for 2–3 minutes per side until browned. Work in batches if needed.
- Reduce the heat to medium and add the butter, minced garlic, and thyme.
- Toss the steak bites in the garlic butter for 1–2 minutes until fragrant.
- Stir in the chopped parsley and remove from the heat.
3. Assemble
- Spoon a generous serving of creamy mashed potatoes onto each plate.
- Top with the butter garlic steak bites.
- Drizzle the remaining garlic butter from the skillet over the steak and potatoes.
- Garnish with extra chopped parsley and serve immediately.

- Roll the dough thin for a crisp, cracker-like texture.

- Pair with hummus, labneh, baba ganoush, or a fresh Mediterranean salad.
