For the Salad
- 1 can (15 oz / 425g) chickpeas, drained and rinsed
- 1 can (15 oz / 425g) cannellini beans, drained and rinsed
- 1 can (15 oz / 425g) kidney beans, drained and rinsed
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ cup red bell pepper, diced
- ¼ cup red onion, finely diced
- ¼ cup fresh parsley, chopped
- ¼ cup fresh cilantro, chopped
For the Crispy Halal Pepperoni
- 4 oz (115g) halal beef pepperoni slices
For the Dressing
- 3 tbsp extra-virgin olive oil
- 2 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 garlic clove, minced
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Heat a skillet over medium heat. Add the halal pepperoni slices and cook for 2–3 minutes per side until crisp. Transfer to a paper towel-lined plate and let cool. Break into bite-sized pieces.
- In a large bowl, combine the chickpeas, cannellini beans, kidney beans, cucumber, tomatoes, bell pepper, red onion, parsley, and cilantro.
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, garlic, oregano, salt, and pepper.
- Pour the dressing over the bean mixture and toss well to coat.
- Fold in most of the crispy pepperoni, reserving some for garnish.
- Chill for 15–20 minutes if desired to allow the flavors to meld.
- Top with the remaining crispy pepperoni just before serving.
