  • 1 cup cherry tomatoes, halved
  • ½ cup red bell pepper, diced
  • ¼ cup red onion, finely diced
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh cilantro, chopped

For the Crispy Halal Pepperoni

  • 4 oz (115g) halal beef pepperoni slices

For the Dressing

  • 3 tbsp extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  • Heat a skillet over medium heat. Add the halal pepperoni slices and cook for 2–3 minutes per side until crisp. Transfer to a paper towel-lined plate and let cool. Break into bite-sized pieces.
  • In a large bowl, combine the chickpeas, cannellini beans, kidney beans, cucumber, tomatoes, bell pepper, red onion, parsley, and cilantro.
  • In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, garlic, oregano, salt, and pepper.
  • Pour the dressing over the bean mixture and toss well to coat.
  • Fold in most of the crispy pepperoni, reserving some for garnish.
  • Chill for 15–20 minutes if desired to allow the flavors to meld.
  • Top with the remaining crispy pepperoni just before serving.
